Since I'm a "rattlecan man" I use spray cans and spray 'til the car looks good. I have NO idea how much paint I use. I do however try to use as few coats as I can so not to bury any details in the body.

Depends on how much "body" you're painting.

If you're doing a curbside type build where you're only painting the body surfaces, paint usage is minimal.

If you're painting the underside of the hood, the engine bay, maybe the dashboard & steering wheel etc, you'll use much more.

You also have to take into consideration how many coats you'll be using.

On a typical stock build, with the body, hood, firewall & possibly the dash & steering wheel, I usually use about half of a one ounce jar...... airbrushing of course.

That allows for about 3 fairly light color coats for everything.

This is shot with rattlecans: Testors "One Coat" metallic (yeah, right) and Testors "wet look" clear. It took a little over one full can to get 5 coats of color on the thing (which were necessary to get full-hiding), lightly sanded between a couple of the coats because of minor trash. Then more than 1/2 a can of clear to get 3 coats, enough to wetsand and polish.

I mostly paint with Testors or Model Master bottle paints (airbrushed). Usually 1/2 oz. will do three coats on a car, including under hood and engine area, with some left over. That does not include chassis or interior. I use MM bottle clear as well, maybe 1/4 oz. or so.
