I have flocking i usually use for the carpets in cars, i tried it on a dashboard and it doesn't look right, maybe too thick im not sure. So what would be the best thing to use for flocking the dash?

I don't think I've ever seen a dash with carpet on it. Why would you flock a dashboard?

You've never heard of a "dash rug" or "dash mat"???

I think they make these dash cover thingies that are made out of carpet. I've seen 'em at Pep Boys and certain flea markets...

As you can see, the texture is slight. In scale that texture would be pretty much invisible. Flocking a scale model dash would be the equivalent of a shag rug in 1:1 scale.

Its a race car im building and most 1:1 race car dashboards are flocked to prevent glare.

Sounds more like Alcantara. I would use a product like Scale Motorsport's Faux Fabrix, or Rustoleum's Suede Texture paint if you don't have an airbrush. With an airbrush it's easy to do with your regular paint, just thin it less and mist on light, dry, grainy coats.

For that look you can use any of Testors interior "fabric" spray bombs I used the black for the floors, front seatback , and package shelf......

My thoughts exactly. Valspar has a suede finish paint that is sold at Michael's stores, and it is the same stuff that used to me marketed as Krylon "Make it Suede."
